How to cook it

Steam for four to five minutes with garlic and chilli, grill over high heat with a brush of butter, or flash-fry and toss with salt and pepper. Stop as soon as the meat turns opaque — it firms up and dries out quickly.

Keep refrigerated between 0 °C and 4 °C and cook within two days, or freeze on the day it arrives.
